First made in Pacifica in the late 1800s by Stefano Mori and his wife. Originally from Italy, the couple bought 19 acres of land just 11 miles south of San Francisco where they built a home and a bunkhouse, farmed, and additionally grazed horses and cattle. In the kitchen, Mr. and Mrs. Mori also made cheese.
More than 120 years later, the Pacifica Historical Society (PHS) found the old Mori recipe and gave it to an artisan cheesemaker. Pacifica Jack cheese now sells through the PHS for $8 a pound. It can be purchased in the gift shop of the Pacifica Coastside Museum (Little Brown Church Building 1910), 1850 Francisco Blvd., Pacifica, or at Manning’s Books & Prints Old & Rare in the Crespi Business Center, 580 M Crespi Drive, Pacifica.
